Thyme mixed vegetables

Servings: 4

Ingredients:
1 lb organic baby carrots
12 oz green beans
10 oz sliced baby bella mushrooms
2 1/2 tbsp butter or ghee
2 tbsp thyme

Instructions:
1. add 2 tbsp ghee or butter in a large pan until melted
2. add carrots, cover and cook until softened about 20 minutes
3. add green beans and reduce heat to low for about 10 minutes
4. add 1 tbsp of thyme and continue cooking covered for another 10 minutes or until carrots are fork tender
5. add mushrooms, remaining 1/2 tbsp ghee/butter, & 1/2 tbsp thyme cooking until mushrooms are softened


this recipe is best when all the vegetables are soft, be patient, it's worth the wait!
