Total time: 10 minutes Servings: 8 Ingredients: 1 15.5 oz can white beans, drained 1 1/2 C shredded carrots (about 3-4 carrots)* 1/2 C tahini 1/4 C agave or honey 1/3 C olive oil 1/2 red pepper, sliced 1/2 C dried apricots 1/4 C dried pineapple 1/2 lemon, juiced 1 tbsp + 1 tsp chili garlic sauce Instructions: 1. rinse and drain the beans adding to a food processor with the carrots, pulsing to mix up 2. add the tahini, agave/honey, and olive oil blending together until smoother 3. add the remaining ingredients until smooth hummus consistency forms *I used the pulp from the carrots in a juice so it was sliced very thin
