Cook time: 50 minutes Total time: 1 hour 5 minutes Servings: 10 Ingredients: Crust 1 1/2 C almond flour 1/4 C + 1 tbsp coconut flour 1/4 C + 1 tbsp tapioca flour 1/2 tsp baking soda 4 tbsp ghee 4 tbsp maple syrup 1 tsp vanilla extract Topping 2 C rhubarb, chopped 2 C strawberries, chopped 1/2 C coconut sugar Instructions: 1. preheat oven to 325 2. mix crust ingredients in a bowl until well combined and a dough forms 3. lightly grease a loaf pan or small casserole dish and evenly spread the dough on the bottom 4. bake in the oven for 15 minutes 5. while the crust is baking place the filling ingredients in a small saucepan on low-medium heat until the sugar and strawberries begin to melt into a jelly like texture 6. remove the crust from the oven and top with the filling, spreading evenly 7. bake for 30 minutes 8. remove and let cool, then scoop into small bowls and enjoy!
