Cook time: 15 minutes Total time: 20 minutes Servings: 4 Ingredients: 1 tbsp ghee 1 lb ground grass fed beef 1/2 diced yellow onion 1 tsp minced garlic 2 C chopped collard greens 1 tbsp oregano 1/2 tsp paprika 1 tsp chiptole chili powder (or sub for paprika) 1/4 tsp turmeric salt and pepper to taste Instructions: 1. melt ghee in large pan on medium heat, add onions and garlic until they become transcluent 2. add the spices and combine until aroma forms 3. add the ground beef and mix well until slightly browned about 2-4 minutes, then add in collard greens 4. cook until collards begin to sweat and soften and beef is cooked through this recipe tastes great with sliced avocado on top!
