Cook time: 30 minutes Total time: 35 minutes Servings: 2 Ingredients: 4oz uncured nitrate free pancetta 1 head romanesco, roughly chopped 1 small onion, diced 2 cloves garlic, minced Instructions: 1. place a medium sized pan on medium heat and add the pancetta, onion and garlic stirring occasionally until well combined and fragrant about 5 minutes 2. add the romanesco and stir occasionally for about 10 minutes 3. cover and let simmer, stirring occasionally so it doesn't stick to the pan, it is ready when romanesco is soft but not overly cooked about 15 minutes
