Cook time: 15 minutes Total time: 25 minutes Servings: 4 Ingredients: 2 cloves garlic, minced 1 yellow onion, chopped 1 tbsp avocado oil 2 fiji apples, peeled and diced 2 tbsp fresh basil 1 can pumpkin puree 1/2 tsp sea salt 1/2 tsp pepper 2 C chicken broth Instructions: 1. place the oil, garlic and onions in a large pot and saute for about 5 minutes 2. add the remaining ingredients and reduce heat to low and simmer covered for about 15 minutes 3. use an immersion blender to blend the soup until creamy and smooth
