Total time: 5 minutes + 4-8 hours in fridge Servings: 4 Ingredients: 1 14 oz can coconut milk 3 tbsp chia seeds 1/4 tsp peppermint extract 1 tbsp maple syrup 2 tbsp cocoa powder (optional) 3 tbsp pomegranate seeds Instructions: 1. mix coconut milk, chia seeds, peppermint extract, and maple syrup in a covered bowl and shake generously 2. refrigerate for 4-8 hours 3. remove from the fridge and top with pomegranate seeds before placing the pomegranate seeds on top you can take 1/4- 1/2 of the pudding and mix in the cocoa powder to one half to make a parfait. If you want a strictly chocolate peppermint pudding, add the cocoa powder before refrigerating the mixture.
