mediterranean veggie salad

Ingredients:
1 large zucchini, chopped
2 roma tomatoes, diced
2 red bell peppers, chopped
1 large cucumber, chopped
1 C tabouleh
2 tbsp rice vinegar
2 tbsp olive oil

Instructions:
1. chop all the veggies and place in a large mixing bowl with tabouleh
2. mix together then add in the rice vinegar and olive oil

this recipe tastes great if you let the flavors soak in the fridge overnight
