ham and pea soup

Servings: 6

Ingredients:
1 onion, diced
2 tsp minced garlic
1 tsp salt
1 tsp pepper
1 tbsp bacon fat
2 C diced ham*
1 16 oz package of frozen peas
5 cups broth
1 bay leaf

Instructions:
1. in a medium pot heat bacon fat until melted, then add garlic and onion until onion becomes translucent
2. add the peas and stir to combine for about 5 minutes, then add broth, salt and pepper
3. bring pot to a boil for 10 minutes, then reduce heat and let simmer for about an hour
4. roughly pulse the mixture with an immersion blender to break up peas until they split
5. reduce the heat to low and add the bay leaf and ham cooking for an additional 40 minutes

*if you have not made the ham prior, place 1 lb pork shoulder or putt butt in a pot with water and let simmer for 6-8 hours
