Cook time: 35 minutes Total time: 45 minutes Servings: 4 Ingredients: 4 eggs, whisked 2 tbsp dried basil 2 tbsp dried oregano 1/2 tsp garlic powder 1 1/2 C almond flour 1 large eggplant, sliced into medallions 1 package of sliced mozzarella cheese 1 jar garlic marinara sauce Instructions: 1. preheat oven to 375 2. slice eggplant into medallions 3. in a small bowl whisk eggs and set aside 4. in a separate bowl mix almond flour and spices together 5. dip the eggplant medallions on both sides in the egg mixture and then coat with spice mixture 6. spread eggplant evenly on a lined baking sheet, bake for 7 minutes, flip and bake for an additional 6 minutes 7. remove eggplant from the baking sheet in a large casserole dish layer the eggplant, a spoonful of sauce and slice of cheese until all eggplant has been stacked 8. bake for 20 minutes remove and enjoy!
