Cook time: 15 minutes Total time: 20 minutes Servings: 2 Ingredients: 1 can full fat unsweetened coconut milk 2 C unsweetened almond milk 1/4 C coconut sugar 3 eggs, yolks & whites separated 3 cinnamon sticks 1 tsp nutmeg + pinch 1 clove Instructions: 1. add the milk and spices to saucepan and bring to a boil 2. as the milk and spices begin to heat, separate the egg yolks from the egg whites into two separate bowls 3. in a bowl with the egg yolks, add the coconut sugar and whisk until the mixture forms a thick ribbon consistency when you the beaters, set aside 4. whisk the egg whites until fluffy (about 5 minutes) 5. remove the milk and spices from the heat and slowly add in the egg yolk and sugar mixture beating until well combined 6. add the egg whites, whisking until well combined 7. refrigerate until chilled
