Cook time: 10 minutes Total time: 20 minutes Servings: 12 Ingredients: 12 pitted dates 1/4 tsp peppermint extract 1/4 C coconut milk 1 tbsp coconut butter 1/4 C cocoa powder + 1/2 C for coating 1/3 C coconut flakes Instructions: 1. soak dates in a bowl of water for 1 hour to soften 2. dump the water and remove the pits from the dates, then add to a food processor 3. blend the dates until they become a thick chunk 4. add in the coconut milk and pulse until mixture is blended and creamier 5. add in the coconut butter and pulse until mixture appears smooth 6. add in 1/4 C cocoa powder until no chunks remain and the mixture looks like creamy chocolate 7. refrigerate for 1/2 hour then roll into balls* and sprinkle with remaining cocoa powder and coconut flakes *to keep mixture from sticking to your hands you can lightly spray them with coconut oil before rolling
