Cook time: 17 minutes Total time: 22 minutes Servings: 4 Ingredients: 1 lb raw unsalted cashews 2 tbsp + 1 tsp curry powder divided 4 tbsp avocado oil Instructions: 1. preheat oven to 350 2. line a small baking sheet with parchment paper 3. in a large bowl mix together the cashews, avocado oil and 1 tbsp curry powder until cashews are well coated 4. spread onto lined baking sheet and bake for 10 minutes, flip and bake for an additional 7 minutes 5. remove and let cool then sprinkle with remaining 1 tbsp + 1 tsp curry powder
