Cook time: 20 minutes Total time: 30 minutes Servings: 4 Ingredients: 1 lb sliced chicken breasts 1/2 C almond meal 2 eggs, whisked 1 tsp salt 1 tsp pepper 1/4 tsp paprika 1 tsp oregano 1 tsp garlic powder 1 tsp pickle juice Instructions: 1. preheat oven to 400 2. slice the chicken into thin strips 3. mix eggs and pickle juice in one small bowl and spices and almond flour into another small bowl 4. dip the chicken strips in the egg mixture then coat with spice mixture 5. place a wire cooling rack on top of a baking sheet then place chicken strips on the top of the rack 6. bake for 20 minutes
