Cook time: 25 minutes Total time: 35 minutes Servings: 4-6 Ingredients: 1 bunch of kale, chopped and stems removed 1 1/2 C jasmine or basmati rice 3-4 tbsp grass fed butter or ghee sea salt & pepper to taste 1 package of sweet apple chicken sausage (removed from casing or chopped small) Instructions: 1. cook the rice according to instructions on packaging 2. while the rice is cooking, remove the casing or chop the chicken sausage and place in a pan on medium heat, stirring occasionally 3. once you the sausage has started cooking, in a large pan place 2tbps butter or ghee on medium heat and add the kale, sauteing until softened but not too crispy (may need to reduce heat about halfway through so it doesn't overcook) 4. add the rice, sausage and kale to a bowl and add additional butter/ghee and salt and pepper to taste this recipe also tastes great with vinegar beets on top too!
