Cook time: 40 minutes Total time: 45 minutes Servings: 4 Ingredients: 1 head broccoli 1 tsp onion powder 1/2 tsp garlic powder 1/4 tsp ground mustard 3-4 tbsp olive oil 1 onion, diced 1 C broth 1 C canned coconut milk 1/2 C nutritional yeast Instructions: 1. preheat oven to 450 2. place the broccoli on a baking sheet, drizzling with the olive oil and spices, bake for 20 minutes 3. when there is about 7 minutes left add the onion to a pot and saute until lightly browned then add the cooked broccoli, broth and and coconut milk, simmering for about 15 minutes 4. add the nutritional yeast until it is 'creamy' 5. using an immersion blender or moving to a food processor, puree the ingredients until desired soup consistency is formed you can make this recipe with dairy by swapping milk for the coconut milk and cheese for the nutritional yeast
