blueberry cashew milk

Prep time: 20 minutes + 8 hours soaking
Total time:  20 minutes + time to chill in fridge
Servings: 2

Ingredients:
5-6 pitted medjool dates
2 C raw unsalted cashews
8 C water, divided in half
1 tsp vanilla extract
1 1/2 C blueberries
1 tsp agave or honey

Instructions:
1. in a large container with a lid place 4 cups of water, dates, cashews and vanilla extract in refrigerator for 8 hours to soak 
2. remove from the fridge and drain the water. Place the ingredients into a food processor and add 4 cups of water
3. add in the blueberries and agave or honey
4. blend until smooth
5. place a tight strainer over a large pot and slowly pour the mixture to drain through. You can squeeze out any liquid with a cheese cloth.
