Blueberry Cashew Milk

If you haven’t caught on yet, beverages are my all time favorite. I love creating new and fun flavors to change up the daily intake of water. This recipe was inspired by the dairy section of the grocery store. While walking by I noticed the milk and some blueberry yogurt sitting next to each other and thought, what a great combination!
This milk tastes great on it’s own but you could also add it into a smoothie for an added boost. It would also taste amazing with these brownies!

Ingredients
  1. 5-6 pitted dates
  2. 2 C raw unsalted cashews
  3. 8 C water, divided
  4. 1 tsp vanilla extract
  5. 1 ½ C blueberries
  6. 1 tsp agave or honey
Instructions
  1. In a large container with a lid place 4 cups of water, dates cashews and vanilla extract in refrigerator for 8 hours to soak
  2. Remove from the fridge and drain the water. Place the ingredients into a food processor and add 4 cups of water
  3. Add in the blueberries and agave or honey
  4. Blend until smooth
  5. Place a tight strainer over a large pot and slowly pour the mixture to drain through. You can squeeze out any liquid with a cheese cloth
