Cook time: 45 minutes Total time: 1 hour 25 minutes Servings: 2 Ingredients: 1 acorn squash cut in half lengthwise 3 slices nitrate free bacon 1 C cooked and diced chicken breasts 1 C spinach 3 green onions, sliced 1 1/2 tsp garlic powder 2 tsp onion powder pinch of salt and pepper 1/4 C BBQ sauce Tessemae's creamy ranch dressing Instructions: 1. preheat the oven to 425 2. cut squash and remove the seeds, place the squash face down on a lined baking sheet and bake for 40 minutes 3. remove the squash and reduce heat to 375 4. in a large skillet cook the bacon on medium heat until crispy, remove and place to the side 5. scoop out the cooked inside of squash and add to the skillet along with the chicken, bbq sauce, spinach, green onions, and spices and cook for about another 20 minutes, mixing occassionally 6. while the stuffing is cooking dice up the bacon into small pieces, then add into the skillet with the remaining ingredients 7. place the stuffing mixture back into the squash shell and bake for 15 minutes 8. remove and drizzle with ranch dressing and enjoy!
